Wedding stock photos are actually not as hard to pull off as you think. Of course, it may take a lot of setting up and costumes but most people have wedding dresses and such.
A good way to take wedding stock photos is to actually go to a wedding and take the pictures there. Be sure to talk with the couple before hand. Try to create a deal with them where you will photograph their wedding in return for the rights to the photographs. Some will probably not want pictures of their wedding available for anybody to use but others may like it. You can arrange to be their photographer for free in return for the rights to the photos.
